Never start out under power. Let the clutch out with no power to get the truck rolling then apply power. Your drive line will thank you after awhile.

I got it now. I am actually able to start in 3rd and 4th pretty smoothly. I understand not to do this when I start driving for money but for now its fine. problem I was having was I was easing off the clutch in one fluid motion slowly, now I start getting it to the first point of it engaging and sort of holding it there for a second until the truck starts to actually get the roll going and then easing the rest of the way off. hasn't bucked on me yet besides maybe a little.

I am with the others on starting in 2nd gear. Does the truck have that beep beep alarm when you back up? It should and if so that is how you can tell if not in 2nd gear.

I'm going to be the voice of dissent here, but I start out in 4th on a regular basis. If I'm loaded up really heavy I'll go down a gear or two. Empty, no, it's 4th gear.
One thing to note, too, is that all the trucks I've driven, being local here in California, are geared for California, which is to say a little lower. Still I doubt that my 4th is equivalent to most 2nd in most trucks, maybe closer to third, but not second. -
I would be willing to bet your clutch is getting hammered whether it jumps and shudders or not
