The last time Panhandle was close to the King they were stuck in that mess in KY. I try to make sure that they aren't anywhere within a 50 mile radius of one another. Panhandle will be driving through this part of the country the same day the King will.....first thing the King says is "Oh ______! Can't you send him another way?" Sad thing is I miscalculated ....thought Panhandle would be heading back toward Omaha on Saturday or Sunday......Illinois is expecting snow and ice on Sunday evening.....shoot, I hate it when my evil plans fail!

Left the house headed for my pickup in Hendersonville NC but got turned around in Durham and got sent to North Charleston SC for a load to Lowes DC to Mount Vernon TX. Picked it up, but then got sent to Columbia SC Flying J for a babysit and swap. This load is due at 8 am Sunday, its 1100am now Saturday 926 miles away. I could be advancing this load. My swap is supposed to be at 3pm. Hmmm. I can understand somebody needing this load to get home, but to risk OTD? I asked for an explanation/justification but never got a response. So here I sit. Just a pawn in the chess game. I see where I missed a couple of calls last night while I was eating dinner and was charging my cell. Maybe I need to give them the benefit of the doubt.

The King is home and we are having a cook off. He is sticking to the tried and true with a BBQ rub and cooking in the smoker while
I am trying something different. So far it looks just like this picture and smells ok.....but when you walk outside and you get a whiff of the smoker going......I am afraid I am going to lose the cook off.... Nothing beats good BBQ. If you hurry Panhandle, I might save you some! ( And if you are nice and don't bring any snow with you!)

Ingredients:


1 (2-3 pound) boneless pork roast

2 /3 cup grated Parmesan cheese
1/2 cup honey

3 Tbsp soy sauce

2 Tbsp dried basil

2 Tbsp minced garlic

2 Tbsp olive oil
1/2 tsp salt

2 Tbsp cornstarch
1/4 cup cold water


Spray slow cooker with non-stick cooking spray. Place roast in slow cooker. In a small bowl, combine the cheese, honey, soy sauce, basil, garlic, oil and salt; pour over pork. Cover and cook on low for 6-7 hours or until a meat thermometer reads 160°.
Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Slice roast; serve with gravyPanhandle flash, dtcscout, passport220 and 2 others Thank this. -
Taking my 34 hour at receiver. Will be flying down to Nc. Friday night, move wife up on Sunday back to work Wednesday. Furniture shopping and moving into house Monday and Tuesday. Put my baby girl on truck with me. Looking forward to getting all this over with

In Miami, OK. Closest I've been to the house since thanksgiving. Taking a load up to Omaha, then I'm gonna grab the pickup and take a week off. Got to do the tax thingy. *sighs*

Stopped at a rest area west of Knoxville at the 328mm after 3am. The guy I swapped with left me a trailer without a right turn signal in the middle of the trailer. His last day is Thursday. I took the trailer as is and dropped at Baxter Healthcare as my drop dead was at noon and I arrived there at 9pm so after waiting 24 hours plus for the swap, I wasn't losing more time trying to find a Petro or TA that could do it or a private company to fix it where I have to write an EFS check. Last time I did that, TA held my $640 plus for four weeks while I tried to keep my bills paid on time. Screw me once, shame on you, screw me twice, shame on me. Anyway, headed to Englewood CO for a Tues morning delivery, and I feel another swap on the horizon since I picked up 9 hours past DDT and could only manage 8 hours last night switching from days to night.
