I know the difference.
The inverter just gives you power from the truck's electrical system to run devices. The APU is an actual generator supplying power, along with cooling and heating support. The APU has to be integrated into the truck, sometimes using the truck's cooling system depending on manufacturer and model, is much more expensive and pretty much becomes part of the truck, but is one additional item that requires maintenance.
The Inverter generally is going to provide AC power to run selected items like a refrigerator, TV, etc. You do have the option of getting DC powered devices instead of AC devices, although they are generally more expensive.
