    In Portuguese it is spelled chourico, most would not recognize that spelling. It is very different from the South American version. It is made from pig, and very tasty.

    Only kind I have ever had are Basque and I think they use what ever is on hand, but they are tasty— especially in breakfast burritos

    This is the grill that is cooking all of this.
    The grill burns both propane and pellets. Will be using pellets for these.

    The Basque style are somewhat similar. They tend to spice them a bit differently and a bit less. They are both slow smoked, but not a heavy one like some others. Both are good,
