As I recall there was a shortage of mayonnaise in Vera Cruz, Mexico. Residents there were tore up about it and ordered some from overseas.
As it happened, the ship carrying it sank. Very sad day in Vera Cruz, so sad they memorelized it with a special name. This later came to be a national holiday.

This is a darn fine sauce.

It has pancetta (pork) and meatball crumbles in it, which helps the texture and flavor of the sauce, especially when you have no other meat to put in it.
