    Rao’s sauces are really good, so is the pasta. Another brand that’s really good is Lucini.
    Also use a lot of Cento brand or Mutti brand tomato products when needed.

    @Espressolane By the way, We are getting our first cold snap for north central Texas. So, what do you put into your green chili stew? Can I get your recipe for it, please. You posted pics of it when you were cooking it once but need a little more info.

    Got done with treatment today and I get sent home with a new little friend. It's a pump pushing 5FU till Friday fun never ends 20221109_151440.jpg

    Well it’s better than sitting in a chair at the oncologist’s office for 10 hours while they pump it in you. Any who, still saying prayers for you and sending positive thoughts your way.

    Thanks brother. You ain't said ####, Was there 5 hrs plenty long enough. Using this pump for 48 hrs. Guess they didn't want me sleeping there

    Well, the truth is, I don’t really have a recipe. I can give you a list of ingredients and basic quantities. From that point, it about how much you’re going to make.

    Ground pork, about 1 1/2 lbs
    Pork, usually a full package of what is called “cushion meat” about 3 to 4 lbs. cubed
    2 to 3 medium sized white onions 1/2 inch dice.
    2 heads garlic. Maybe 20 cloves/teeth.
    2 decent sized carrots 1/2 inch dice
    2 celery stalks 1/4 inch slice
    4 to 6 each of red and yellow potatoes (depends on size, usually a medium/small) about 1 inch cube.
    1 28 oz can of roasted tomatillos. Drain the liquid, and hold aside.

    Vegetable or chicken stock, about 4 cups.

    Green chilies. If I used canned, first choice is Hatch brand, second is Ortega. Usually use about 24 ounces of diced and 7 of whole.

    If you can get good fresh peppers.
    3 or 4 Anaheim
    3 or 4 jalapeños
    1 or 2 pasilla
    Usually roast them on a baking sheet, using the broiler, turning as they blister and a bit of char on them. Then remove skins. Cut stem and split to remove seeds. Chop peppers.

    Seasonings
    Ground cumin 1 teaspoon to start
    Ground coriander 1 teaspoon to start
    Oregano 1 teaspoon to start
    1 bay leaf.
    Salt and pepper as needed.

    You want to use a large heavy pot. This will make a lot.

    pot on moderate heat.
    Add some vegetable oil, 3 or 4 tablespoons.
    Sauté onions, carrots and celery to a crisp tender, maybe 10 minutes or less. Add garlic, cook till you can smell the garlic. Use a slotted spoon to remove the veggies. You want to keep the liquid in the pan. Cook ground pork till browned and cooked through. Break up like for meat sauce. Remove from pot, set aside. Add a little more oil and brown pork cubes. Do in small batches to get a nice even browning. When that’s all done, dump all the meats and veggies, plus the chilies, Tomatillos and seasoning into the pot, stir to mix everything. Add stock to cover, if needed add some water. Bring to a nice simmer, then reduce heat to a slow simmer and cover. In about 90 minutes check the pork cubes. If nice and tender, add in potatoes, cook till potatoes are done.

    When finished, get a beer and a bowl, some tortillas if ya got them and eat. If you really want to, a spoon of sour cream is a good addition.
