    If you had my wife's kimchee you might change your mind. Every region of Korea has a distinctive flavor. She's from Myung Dong, famous for kimchee with a nice smooth flavor, then it kicks in with just enough red pepper and ginger to balance well with Korean barbeque (preferably Kalbi marinated for two days and cooked at the table).
