    That was the best smoking ive done yet... Started with a pine fire, just before it was a bed of coals I added 3 chunks of hickory amd 2 chunks of Mesquite and let it burn for about 15 mins. Then I added about 10 charcoal briquets amd closed the door. 5 mins later I put the pork chops on and placed the cover on top. Chops sizzled nicely when I put them on the grill, within 60 seconds flames had extinguished and was smoking nicely.

    Being as pork is famous for easily becoming dry, I was a little worried about that. But they turned out really good, not super juicy... But by no means were they dry either. And the smoky flavor was PERFECT... The Mesquite added just enough tangyness, and the hickory provided a rich smoky flavor. I didnt even have to add any salt or pepper... And I salt and pepper everything, My wife really liked the flavor also. She said it was much better than the steaks I did a few weeks ago. I think I'm getting the hang of this smoking.
