Or sell a larger amount of high cost items at a lower price....and make more profit than selling fewer high cost items at a higher price.

 

You might have something there.

But, for a good steak it is hard to to duplicated at your home versus a high end steakhouse. We don’t have access to the quality of cuts that they have and a meat aging locker.
Best I can do is reverse sear a rib roast then sous vide it and still not get the same quality because of the best meats go to the best chop houses. Sadly I’m just close but no cigar.
