I'm probably bringing on an owner operator to fill a specific clients orders. How should he be paid? I was thinking that I'd give him 75% and he pays all his own expenses including fuel? Is that crazy or what?
What payment option is best & fair?

Yes. You cover cargo insurance. He covers his own.

75/25 is fair

75/25 of the linehaul, he gets all money to the truck is fair. If you're splitting fsc, tarp, extra stop money, then no, not fair.
