    85% of my normal wage.
When we go for our 2 month apprenticeship training we go on unemployment insurance. My work then tops up the UI to 85% of my normal wage.

    Who establishes “normal wage”? Union?

What's the wage % for apprentices out there? AB is 60% for 1st year up to 90% for 4th year. But AB is kinda screwey because you can just do three years for a provincial ticket in either on or off road. 4 years gets you both.

Not union. Wage is kinda set by each shop. Depends on tech availability and how good they are. Our one shop is in the middle of no where so it pays a extra 6$ or so more per hour then our shops in a big city.

Is the government involved in any of this?

Not that I know. As @AModelCat posted the apprenticeship board posts percentages as a starting guide for what to pay the different levels. Ultimately its up to the employer however.
I started at the dealer when I was 17 making 12$/hr. 10 years later and its almost 4x that.

No idea. I got good raises for the work I did (as an apprentice) so never payed too much attention.
