Ceviche is usually fish or shrimp plus onions, jalapeño, cilantro etc marinated in lemon or lime juice that cooks based on the chemical reaction of the acid in the lemon juice. It is served cold and is absolutely wonderful - it seems like raw fish but isn’t. Usually you find it made in very warm climates like you find in the carribean or parts of Mexico. Often it will also have octopus in as well. one of my favorite dishes when I visit Cozumel is called Agua Chile ( spelling?) which is a spicy dish of shrimp prepared this way with super spicy
