Man I’m out here in the sticks in West Virginia on 199, got loaded at the Weyerhaeuser and they told me I couldn’t park there so I take off down the road on pc cussing everything underneath the sun and just before you hit the interstate there’s this small oasis in the holler; I nearly rolled my truck, spun around unlike dummy beside me (probably @D.Tibbitt since he likes to nose in) and collapsed in the store asking them to nourish me since I didn’t have anything to drink

Not a very good one for food, I see a diner across the street in front of me but I’m tryin to eat better and save money haha This horse just needed to be watered more than anything

Restaurants use eggs in two forms, processed and shell. Processed eggs come frozen in half gallon cartons, like milk. This is pre-scrambled, pasteurized and has a few additional things to stabilize the product. Shell eggs are just that, flats of eggs. Most of the chain/franchises use “ carton eggs” for omelettes and scrambled eggs. Typically the products are taken out of the freezer, put in the refrigerator to liquefy for use. The cook takes one of these cartons, dumps it into a pitcher, like the tea or water ones, drops a ladel into it and sets it next the grill. Your omelette or scrambled egg is made from that pitcher. When it gets low, just go get another carton and refill the pitcher. This cycle goes on most of the day. Scrambled eggs on a buffet, never eat these. They use carton eggs to make them, usually in the pan you see them in. Ever notice they never look dried out. Thats because they pour raw mix over them and stir it around. Or you see the pan go into the kitchen area and just a few minutes later out it comes, yep, nice moist eggs.

Shell eggs. Any eggs ordered other than omelette/scrambled is made from shell egg. At the start of the shift, in he cook goes and pulls 2 or 3 flats of eggs from the refrigerator and put them on the grill prep area, next to the egg pitcher, or on a shelf just above the cooktop. When the breakfast rush starts winding up, they go get 5 or 6 more flats. These eggs will then sit for several hours as they are being used.

This will not change my egg eating habits. I love eggs. We always had a carton of eggs on the counter by the stove till it was used up. 2-3 days.
