I didn’t soak it in a brine before I smoked it. I did use mustard has my base, then cumin, salt and pepper, and a Cajun rub out of a shaker bottle. Nothing crazy.

I pulled it off and wrapped it in foil and let it set for an hour. It pulled easy, just a little dry. I got the inside temp up to 200 and then pulled it off.

 

It’s funny how he’s more recognized 40 years after his death than what he was in life. You may not be able to recognize Dave Thomas or Ray Croc, but everyone knows the Colonel. Speaking of fast food, when I was a kid, Wendy’s had the best burgers available. Now, “Hot and Juicy” has become heat lamped and dried out.
