    Nope. This one was the perfect texture and moisture, just the bark and and seasoning was off just a hair.
    Definitely not going into the dog dish.
    What do you marinade it with?

    Well, I’m hooked into a pretty blue 2020 389 flattop that the local shop can’t fix. So guess I’ll drag it 1000 miles or so to a local shop back home…..

    Use a basic recipe. The amounts depends on the size of the meat. For a brisket, usually this type.

    Apple cider vinegar.
    Beer.
    Garlic powder
    Onion powder
    Cumin, ground
    Celery seed, ground.
    Bay leaf, powder
    Mustard powder
    Cayenne, fine ground
    Black pepper moderate ground
    Coriander seed ground.
    Worcestershire sauce
    Soy sauce.
    Water as needed.

    I will mix all this in a gallon pitcher and let stand a bit to get everything hydrated and melded. Usually put the beer in first and stir to get the carbonation out of it. Sometimes I add apple or pineapple juice to the mix for a bit of sweetness.
    Pour over meat. 12 to 24 hours. Then when ready to go to grill, I will strain the marinade, give a quick boil to use as a mop during cooking.
    Usually cook/smoke at 180, actual temps swing from 175 to 190. Cook to an internal temp of 180.

    Oh my, what a shock when I had the bright idea of cleaning my Harley years ago with purple power…. it turned the aluminum dang near a charcoal color…!!!

    Right around 10,000 or so with this longer framed truck. My tractor is 9080 lbs on the rear as a bobtail…..
