    I agree, sauce should compliment the dish not BE the dish.
    I have no secrets, I don’t believe in them. I’ve got a great bbq book written by a world champion grill master who’s name eludes me at the moment, I stole that idea from him. When it comes to bbq and especially smoking technique and experience rule. He said he could tell you exactly what he does and you can’t duplicate it, differences in equipment, technique, etc etc etc. Anyway I’ve got a couple of sauce recipes I make but I generally use a couple bottled sauces I’ve found. There’s one made in Ohio that’s called D B Yummers, it’s very similar to mine and it saves me time. I smoke mine then toss them in that sauce in a wok just to glaze basically. I’m be been experimenting with a honey/soy sauce that I like. Honestly at my house one of my most popular things I make is chicken thighs on the smoker, I use a Weber rub I buy and smoke em. They love them.

    I got Sukiyaki beef with clear noodles and scallions. It is a soup. That was not mentioned. Also wasn’t mentioned it’s half tofu.
    Worst soup I had in long as I can remember.
