    I can tolerate bland. That’s nothing a little pepper, Old Bay, or Worchestershire sauce can’t fix.

    Loaded up with plant matter on the other hand is quite unacceptable.

    I’ve warmed up to vegetables more over the years. Always ate green beans, corn, potatoes. But I actually enjoy a good salad these days. My wife’s influence. Some surprises are broccoli, asparagus, yellow squash, cooked on the stove, and made into a casserole using corn bread, is delicious. Fried eggplant, coated in Italian breadcrumbs, with a slice of provolone, on top of spaghetti. Mmmm. Mmmm. My Novacane just wore off, took a Tylenol 3. Cant eat nothing. Now I’m starving!!

    Meatballs
    2 tablespoons olive oil
    1/4 cup finely chopped onion
    2 cloves garlic, finely minced
    1 pound ground beef
    1/2 pound ground veal
    1/2 pound ground pork
    2 large eggs
    2 tablespoons fresh chopped parsley
    3/4 teaspoon salt
    1/4 teaspoon ground black pepper
    1/3 cup breadcrumbs
    1/3 cup fresh grated Parmesan cheese
    1/4 cup milk

    Sauce

    3 tablespoons butter
    4 slices bacon, diced... Bacon!
    1 1/2 cups chopped onion
    2 ribs celery, finely chopped
    1 medium carrot, finely chopped
    3 cloves garlic, finely minced
    4 tablespoons chopped fresh parsley
    2 cans (28 ounces each) crushed tomatoes
    1 can (14.5 ounces) diced tomatoes
    2 to 3 cups prepared spaghetti sauce.. I like Contadina spaghetti sauce,
    1 teaspoon dried leaf basil
    1 teaspoon salt
    3/4 teaspoon ground black pepper
    1/2 cup fresh grated Parmesan cheese.

    Now the fun stuff!!
    1. Heat the oven to 375 F.
    2. Line a large rimmed baking sheet with foil, set a cooling rack in it, spray the rack with nonstick cooking spray.
    3. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the 1/4 cup of onion and 2 cloves of minced garlic and cook, stirring constantly, until tender. Set aside.
    4. In a mixing bowl, combine the beef, veal, and pork. Mix in the lightly beaten eggs, 2 tablespoons of chopped parsley, the 3/4 teaspoon salt and 1/4 teaspoon pepper, bread crumbs, 1/3 cup of grated cheese, and milk.
    5. Add the sauteed the onion and garlic mixture and blend thoroughly.
    6. Shape the meatballs into uniform 1-inch meatballs (or larger) and arrange them on the greased rack. Bake in the oven for 20 to 30 minutes, or until cooked through.
    Sauce
    1. In a large saucepan on medium heat, saute the bacon, onion, celery, and carrot with 2 tablespoons of butter, stirring constantly, until vegetables are just tender. Add the 3 cloves minced garlic and 4 tablespoons of chopped parsley, the crushed and diced tomatoes, tomato paste, basil, 1 teaspoon of salt, and 3/4 teaspoon of pepper. Bring to a simmer and cover. Simmer over low heat for about 1 hour, or until vegetables are tender.
    2. Add the meatballs and heat through. Stir in the 1/2 cup of Parmesan cheese.
    3. cook the spaghetti in boiling salted water following the package directions. Drain well.
    4. Serve the spaghetti with the sauce and meatballs and provide extra Parmesan cheese at the table.
    Then let the others watch you eat, since they don’t like veggies..

    Note. I copied the recipe so I wouldn’t get you outta sequence, kinda like someone tarping the front of the trailer then overlapping with the rear, it’ll go, but it ain’t right.

    This is supposed to have the same gear ratio as Casper ( 3.58 ), but something is different. Maybe the gearing in the tranny. Cause Casper is like 1475 RPM to do 65mph. This truck is like 1350ish.
