Just last night started a healthy meal delivery program.
Although I went local years ago my wife would make a lunch and she did a great job of mixing up prepared meals to microwave and quality sandwiches et al. After a dozen years of sandwiches I'm going to try a local healthy prepared meal service. $8 dollars per meal, 5 meals a week delivered on a Monday.
Was referred to by some other drivers who said it was awesome and convenient.
Might work for OTR if you could coordinate delivery with home time and freeze most and refrigerate some.
Even when I was OTR I had a elec cooler and a ton of Tupperware that I stocked from the grocery stores and that was back when nearly all truck stops had restaurants attached, there are so many more choices for food and groceries today .
I'm leary of all the small plastic containers but will be able to recycle them at my facility. -

You can cook anything in it that you would normal fry either in a pan like chops or burgers or deep fried..except you don't plunge food in oil. Very healthy.
I fashion a little low rimmed foil liner under the food so clean up is a wipe out with a paper towel. In theory you can cook bacon but I don't want the mess. Tons of recipes on allrecipes. Bon Appétit.Last edited: Jul 23, 2020

These 4 items and $50-75 per week at Walmart. Load up on water and soft drinks, tea, energy drinks or whatever at Walmart too. You can save a fortune on drinks alone compared to TS prices. I may have a sit down meal once or twice a week. A one week per diem check more than covers my food and drink for a month.

If grazing is how you want to eat, that's great, but I would still suggest keeping only the food you want to eat within reach while driving.MonsterOR and Wasted Thyme Thank this. -
I vary a Weber has grill in the side box and an instant pt in the cab.
They work great. the hardest meal I’ve had to figure out is breakfast. Still haven’t figured that one out yet..Sirscrapntruckalot Thanks this. -

Oatmeal can be cooked in a lunchbox oven. I like to put plain Greek yogurt on it to make it creamier and not so plain-tasting. Thin slices of banana sweetens it a little if you want.
Liquid egg whites can also be cooked in the lunchbox oven. I mix part of a can of diced tomatoes and peppers with it then cook it.
I mix Grape Nuts and muesli together which is healthy and filling. Instead of using milk you can use rice milk which is sold in a sealed carton that doesn't need to be refrigerated until opened.
Keep any kind of fruit that doesn't need to be refrigerated.
Chicken breast tenderloins are thin and cook well in the lunchbox oven when wrapped in foil.
Salmon filets wrapped in foil turn out perfectly every time when cooked in the lunchbox oven.
