A 7-3 split won't reset your drive time. You need to take 10 off to get your drive time restored

The answer depends on if you took a three hour break prior to the 7.
If yes: whatever unused time prior to the 7 hour break, plus whatever time you used prior to the 3 hour break.
If not: the drive time you have is whatever was unused prior to the 7. Then you need to take a 3 hour break to get back whatever you used up prior to the 7. -

I found my real trip example utilizing new HOS flexibilities:
After the break that ended at 8:30 pm I drove for 3 hours and 15 minutes: 3.25
Day1:
then after the short "stretch legs" break I drove 1.5 hours: both drive times after the break from day 1 amount to: 3.25+1.5=4.75 hours. And then I went to sleeper for 7 hours. After waking up I was able to drive up to: [11(drive time limit)-4.75(time I drove after the long break on day1)] = 6.25 hours (I almost did) before the necessity to take another break of at least 3 hours. See day 2:
Day2 : Notice, how the 7 hours in sleeper and then 3 hours off duty don't count towards the 14 hour shift clock. This would have been one big 14 hour shift clock violation before the last HOS change.
Day3: Another split: after 8 and 15 minute in the sleeper I was able to drive up to:
[11 - 4 (day 2 two drive times 2.75+1.25)] = 7 hours before the necessity to take...at least 2 hour break.
As you can see, I drove a little bit to the customer: 7 minutes then after leaving the customer I drove for 1 hour and 17 minutes, then I went on scale...short time because I used the CAT app - I recommend it...and after scaling the truck I tried to utilize the remaining time to fullest and drove for 5 hour and 19 minutes. The three afore mentioned driving events amount to 6 hours and 43 minutes (less then 7 hours) and then I took the necessary break of at least 2 hours to be able to resume driving after that.
