I just recently graduated swift academy and got my cdl (currently in the middle of training with my mentor). We trained (and tested) in automatic (auto shift) transmissions. I was expecting to have a restriction or something stating that I can only driving autos. Now that I've got my hard copy of my license it says "restrictions: none". Did the dmv screw up?

No screw up. It's legal in some jurisdictions.
    You're fortunate.
I know someone in your situation. Later in his career he went to a company with stick shifts. He told the terminal manager he's rusty and has only been driving autos since cdl school.
Terminal manager said, "No problem, I'll put a guy in the truck with you for a few days."
Two or three days later, he shifted as well as anyone.

And, when the bell rings, there’s no need to ask the teacher if there’s any homework. Just zip it and leave.

I had a VERY similar thing happen with me. I'm also from AZ and went to Swift "Academy" in Phoenix. The other students went to the Maricopa MVD (AZ calls it MVD instead of DMV) and had the automatics restriction. But, being from Yuma I went there and got my license without the restriction. About a year later I was at the MVD for a different issue and the guy helping me was wicked knowledgeable and good. So, out of caution, I asked him about it and he said don't worry about it.
I still worry some day it might bite me in the butt. But, I don't worry about it very much. I also have enough common sense that I'm not about to jump in a manual truck without training. However, since it looks like I'll stay with Swift until I retire (April 2027), probably never be in one Anyway. Fine by me. I've decided I may not ever be a 'gear jammer', but these automatics are alot less tiring to drive, especially in traffic.
For that matter, I've also realized it's more accurate to refer to myself as a traveler who drives a truck in order to travel. Not as a truck driver. Being a truck driver is the means to my desire to travel around. Love to travel, never grown tired of it. IDK, just something about being in motion feeds my soul. Most of my traveling used to be airplanes and airports (in my last job, I traveled somewhat regularly). I used to love (and still do) to show up at airports several hours early and just explore and people watch. The airport in Frankfurt Germany (I lived near there many years ago) has to be the best for that. It's huge and full of folks from all over the world!

Driving a stick shift isn't complicated at all. No one should stress over it. I also prefer automatics because at the end of a driving day I'm not as tired or stressed. Companies need drivers; always have and always will. They'll be glad to train you for a few days. Learning to drive a stick shift is a simple chore; nothing to worry about.
