The reefer is not to cool, it is to maintain the temperature.

What is your responsibility on this case?
Prepare a paper with the temperature of the cargo at the moment of the load and theirs must sign this.
The paper is a insurance proof against cooling problems.

For cool 40 tones of meat, their need a industrial cooler cabin. Not a reefer trailer.

As general rule, when you are hauling a reefer load, whatever temp the bills indicate to set the unit at (or the load information provided by your company), set the unit at that temp and leave it. If the temp of the box gets too far out of whack, contact dispatch and your company's shop to see if they deem servicing is warranted. Otherwise, once you set the unit with the doors closed, your responsibility to that portion of delivering the load is complete. Your company is able to remotely read the setpoint temp, so you are covered if anything goes awry with the unit set at that temp.
