I saw a truck that barely made an exit. He was doing about 65 on the highway and moved to the right to make his exit and while he made the exit, he ended up running over the bumpy dirt that appears right after you run out of road. His truck went flying, but he made it.
He anyone had this happen to them?

nope I would sooner make next exit and turn around somewhere. Doing what you describe could cause an accident and you will be held liable. Even if you don't hit someone lastly even if you did this your load can move around a lot on something sudden like this or blow a tire running something over. Nothing about it sounds good or worth the hassle. The next exit maybe its 5 or 10 miles but that 10 miles out the way is a lot better than ending your career.

No never happened to me and if I catch any driver of mine driving this recklessly, they will be a former driver of mine.

That driver is a ramp rollover waiting to happen!
Go to next exit and come around. -
Sadly this is why companies use cameras/G sensors.

My favorite is when a person takes wrong exit, and backs up on off ramp.

It hasn't happened to me because I've never encountered an exit that "HAD" to be taken at that speed. Sounds like Speed Racer won't be a driver for long.
