    Common with Irish immigrants, but not because it was a staple of the homeland. A cheaper meat source in the US.

    It amuses me because it is brisket -

    The smoked meat trend here took a cheap cut of tough beef, and elevated it in price, so that new age cavemen could spend 12 hours and a bunch of fuel to produce tender meat.

    Much like ox tail spaghetti - oxtail used to be a cheap staple - now it’s a trendy overpriced by product.

    Um.. Ox tails How are you on a 35# box of Hormel Neck bones and a sack of Texas onions. Feed an army...
    Used to del a lot of them neckbones to some Chinese grocers. Some swore by the red box (Hormel) and others by the larger 50#, (Black lettering) box of St Louis Independent. Contentious, no substitutions...
