My heater in here is 1500w on high, so yes. As far as the AC goes, I would think so, but that 7500BTU is mighty small for a big truck!
I had a 8k BTU portable one for a while, and it was WAY underpowered. regardless of what anyone says, it wont keep a big rig cool in the heat.

I am using a Yamaha EF2000is for my needs, but the Honda 3000 would be a good choice. Take a look at the Yamaha EF3000iSEB model. Very quiet. 53-60db. And the Yamaha models across the board can be had in a tri-fuel version.... propane, NG, or gasoline. You can switch between fuels any time you want. One could strap a forklift propane tank or NG (tunnel legal) tank on the frame and only worry about fueling occasionally.
Most of all, if you have the frame rail space, get a custom box that the generator can sit in and operate in. Mine is safe and secure and can operate right inside the box I have mounted on my truck frame, weather protected. Except maybe a tornado or hurricane.

I have said before, lower than 13.500btu is going to have a hard time in a truck unless it's a small sleeper. Doesnt matter what room they say it covers, a truck is no where bear as insulated as a house as far as the portables go.
I was parked in Southern Az last year, in August, for 3 days. Never even started the truck. Me and the dog stayed comfortable day ad night. Think it was @120 in the daytime, 90's at night.
Just my .02
