I think any of the manufacturers would be able to custom build whatever your heart desires.
Personally I would go with a Utility 5000R with super singles and aluminum wheels.
I'm not sure if the 5000R is a actual model or if its just something you say at a dealer and they know to just upgrade the insulation. I do know it adds about 1.5" of insulation, its also a different type of insulation.
But if you are hauling a variety of goods, from -20 Ice cream loads to 55 degree Hershey loads, you can't go wrong saving $ on reefer fuel.
Also makes it possible to get that elusive -10 empty trailer precool requirement some shippers have...in Nevada....in June...at 1pm....Good luck achieving that with a 3000R.
Some other features I would get....
Self inflating tire systems (a must for super singles imo)
Side Skirts (CA compliant + they save fuel)
Air Ride = Duh
Save as much weight as you can, nothing worse then wasting hours having loads adjusted or not being able to take loads because of weight.
Can anyone think of anything else you would want added.

If I were buying a new trailer now id buy a utility 3000r with a carrier engine. The new ones are pretty quiet unlike the older units.

I am looking at a great dane with thermo guard I think it's called. I went back and forth on thermo king or carrier unit. The carrier unit has far greater cooling capacity and also has a 6 cylinder compressor vs thermo king's 4 cylinder. It is easier on fuel. Buy the skirts and if you can stomach it the boat tails. I won't do super singles, duals work for me. Disc brakes all around. 8 aluminum rims and Michelin rubber. Carrier 7500. Air slide tandems, of course. And all the lights lol

Great Dane , think about the quality and workmanship when looking at a Trailer. Get underneath and pay attention to welding and things like that . Also think about the resale Value down the Road . I don’t care what people say Great Dane will always have the best resale Value
