Thinking about buying my first truck. What would be some of the downside of buying an older cab-over vs a newer rig?

A lot of places want newer trucks unless you have own authority.
Maintence is on either, older trucks were usually cheaper to maintain, no costly emission issues. -

I used to have a 92 Freightliner COE with the big sleeper, you could jump up and down on the bed and not hit the ceiling. I could haul 50,000 lb loads, tight docks were no problem, the turn radius made it pretty easy to get in and out. But make no mistake about it, bouncing around the country in a cab over is not for the faint of heart. Alternator need replaced? Piece of cake, just jack up the cab...but wait...you better secure everything in the cab first, otherwise it might just go through the windshield and cause a second problem. Those who drove COE trucks know what I'm talking about, the rest can take our word for it...it was not exactly a slice of heaven.
