There's several large brokerages and many smaller imitations that outright state all of their loads are continuous.
The reality is that only specific situations require continuous such as most produce which was mentioned already, pharmaceuticals at times, and i think yogurt just as some examples.
For me, the bols are the first and usually highest authority outside of specific customer requests (such as mixed loads).
As for temp readouts it's usually stated in the ratecon such as "must provide within 48 hours".
Temp monitors are the majority of the time notated in the product description.
And with those things in mind most loads are probably start stop. Dead batteries do happen and jump cables still solve that problem (also the reverse one of the few benefits of reefer).
Starters act up every so often and wrench taps still come through in a pinch.
