I come from a city near the sea, where a little bit of generator attached to a powertrain of a large ocean going boat (Talking around 40 foot here...) is capable of supporting 120 volt power through the entire vessal for the likes of the Galley and so on.
I see that APU's are coming on to tractors, I like them and support their potential. Two gallons of idle time burned is way better than turning over a 500 horse engine to drive a 3 pound air conditioning compressor or to heat fluids in winter at 10 gallons per night.
I still advocate tractors being wired to 120 volt marine standard so that no matter what the situation is, you can heat water for showers etc. Cook, and live in reasonable small house type comfort. 12 volt is wonderful, but they simply burn through because you are just not going to build a adequately insulated UL and other protections for such a environment.
My last tractor OTR was a JBH International of around a 1989 vintage. It's not much of a tractor, but with a awesome dispatcher who respected my current hours of service and listened to what I have to say when I have to say it the whole time Im there made that truck pretty adequate comfortwise becauwe we are not doing 2000 plus miles in a single weekend. -

You can get a single burner stove that screws on to the top of one of them small green propane bottles. They'll heat up a small sauce pan of water really quick. Just make sure it is level or it wont burn right, and the pan could slide off. I never used mine inside the truck. But it wasnt too much of a problem setting it out on a my stepbox to use it. I don't use it anymore, because this company provides apu, inverter, and fridge in all our trucks.
