I would advise against this. At least without looking into it in detail. Permits are inexpensive. If you(or your children after your death) sell the house at a later date a good quality hone insoection by a potential buyer could discover any modifications/additions/upgrades to the home and if there is no record with the city/county of pulling a permit it can create a big expensive headache.

 

And if they catch you doing the work without permits they can make you tear it all out.
