Hey there, I've been getting annoyed with the frustrations of an air actuated fifth wheel release via in cab switch. I had a guy tell me that you could just remove that air cylinder and use it as a manual pull release. Is it really that simple? I was going to ask my mechanic to do it well I'm at home so I just wanted to make sure. Thanks.

if it ain't broken, don't fix it - Wiktionary
Proverb: Leave something alone; avoid attempting to correct, fix, or improve what is already sufficient (often with an implication that the attempted improvement is risky and might backfire).
I’m quoting that. -
It has already caused plenty of issues getting stuck, so I'm not waiting for something to go wrong worse down the line.

You can disconnect it. Or you can pull manually with it hooked up, just takes a lot more muscle to do it.

You need to disconnect the air cylinder from the release rod, otherwise you are pulling against the air cylinder AND the release. Usually the air cylinder has a pin on one end that can be removed.
