    5DB56EB9-4A8C-413B-B593-2EC69957E604.jpeg My wife’s been coming up with some good chicken & rice dishes. I jokingly call it chickensh##. Yesterday She Cut up 3 boneless breasts and marinated in Italian dressing then cooked it in canola oil, with some Stonemill brand garlic and herbs seasoning. Comes in a container with 4 different choices of seasoning, very convenient. Then she scrapes the pan, leaving the scrapings and a little bit of oil in, adds 4 cups of chicken broth, 2 cups of rice, a small bag of frozen broccoli ( or whatever Veggie mix you like) bring to a boil, throw in chicken, let simmer for 20 minutes, or till rice is tender. Seems like a simple thing that could be made in the Truck. 1 pans all that’s needed. Frozen veggie bag is handy. Tastes delicious. Just polishing off the leftovers, thought I’d share the recipe. We add a little soy sauce to likings. Gotta go, Crabcakes are ready. Got some Remoulade sauce to go with them. Mmmm mmmm. I Gaaaarontee.

    I just did one of our favorites yesterday. Ground turkey and sauteed portabello mushrooms over rice. Put on the rice, brown the turkey, sautee the mushrooms in the same pan right quick, done. Beautiful thing.

    This was dinner a few nights ago. This is just before it went into the oven. Real easy, fine sliced onion and minced garlic on the bottom, fine sliced lemons. Capers (the green dots) 375 oven, about 30 minutes.

    That is a GOOD meal when done correctly. But there's a restaurant near me that I will NEVER go to again over that dish. Lol
