First, good to see you around again. Maybe you’ll not be such an occasional visitor.
The Zwilling and Henckels knives made in Germany are very good quality. Have a few here at the house. Used daily. Weekend they get a workout for sure. Another brand that is often over looked is messermeister, very high quality german made knives for somewhat less (depending on product). Have a few here at the house that are pushing 20 years old.

Doing a 34 at the J outside Cheyenne again. On a side note, I changed fuel filter in the parking lot.....again. I was hoping to make it back to the house. Apparently I am a slow to non-existent learner.

I have a couple of hand made knives that I will never part with, they are not as polished and the handles aren't refined like the mass factory made knives but the way they handle, cut, hold an edge, cannot be replicated in a factory. One was a gift/tip for cooking at a private party, the other I actually paid for and spent more on one knife than I ever thought I would but that one is a thin blade vegetable cleaver that can slice anything so thin its transparent without wondering through the cut.
Most people do not give much though to knives in the kitchen, the just grab whatever they have on hand and go for it. I was that way for many years till a Michelin Chef spent some time with me, showed me some knife skills and introduced me to real knives. Don't get me wrong, I still occasionally add some "human" seasoning to food in the form of the tip of a thumb or pinkie finger because my "knife skills" are often less than skilled. That could be considered the down side to a proper sharp knife, you do not know you've added your own flesh and blood till you try to figure out where the red food dye is coming from and realize you took the end of your thumb in the same thickness as the sliced mushroom.beastr123, Hurricane69, Gatordude and 11 others Thank this. -
