Why would they want me to go through Las Vegas instead of the normal route of the I 10 to the 210 to the I 5?
Carrying sour cream at 35 degrees continuous. I really can't make any sense of it, as the elevations are the same as well as the current hit temps!
Any ideas?

Shorter route most likely

Two questions. What makes 10/210/5 a normal route from there? And why would you want to go through LA and Sacramento?

I thought so to until I read the rest of the route.
From Vegas, I 15 south to CA58 to CA99 to i5. It's not shorter the way it was planned out.
Just curious, elevations are not a factor for sour cream. -
Because the GPS says so, both of them. I've been routed this way lots of times. LA will not be problem, as I'll go through there at a low traffic, off peak time.

I would question whoever "plans" your routes. Just run up 93/95/395. Nice peaceful drive and you don't have to mess with all the riff raff in a couple cities like LA and Sac.

When I did dry van, I once had to do a route that avoided high elevations because I was carrying bags of potato chips. As for the route, some of the companies give you a detailed route. I'm already to far into the route to divert up to Vegas, so it's the 10 to 210 to the 5 north.

Me personally I would avoid Cali entirely and go up I 10 to i17 Falstaff and pickup us 89 north all the way thru AZ and Utah out to ut20 to i15 to i84... I done the 10 to the 210 to the 5 as well. Probably about the same distance +- a hundred miles.. Less stressful going up thru Utah and nicer drive

This shows the route suggested is longer, slower and...limited by Commifornia's 55 MPH speed limit for trucks. If you're running for a mega carrier who has taken your weight, fuel stops (this is the key) etc into consideration then you follow their routing. It's their truck and they don't trust you to make up your own routing.
