Right. No sugar, no carbs. Only meat, eggs, and butter. 1 or 2 meals a day. Even walking 10 mins after meal is good for your health.

Yep, we some tuffsumbitches. Lot of walking and climbing, and pulling on the bar is a very good upper body workout that also works your core. (provided you know not to pull with a straight arm which destroys shoulders.)

Carhauling done right will make you farm strong.

When I was your age, I loved loading roofs. Keep you in shape but don't know what your winter hours would look like in that neck of the woods. For something OTR, check out Sherwin Williams. Tailgating pallets of paint is more work that just sitting on one's butt, but not too intense.

I actually lost weight OTR once I started intermittent fasting and I'm not very big to begin with. I eat once a day whenever I'm done driving for the day. If it's a 34 reset, then just regular dinner time. Hard to gain weight to the point of obesity when it's all coming from one meal. It sounds terrible, but your body gets used to it pretty quickly. Eventually, you just stop getting hungry until the evening. Been at it for a year now and I can't remember the last time I actually ate breakfast on the road.
