1 almost all the time.
2 takes such an incredibly light touch, I think it's more fatiguing. Of course, most drivers in trucks (and 4-wheelers) who 2 hand, based on how much they move around in the lane, aren't driving by feedback, but by position. It's much harder to feel the feedback through the wheel using both hands. You rarely see a two-hander with the steering making the almost constant minor corrections based on feel. -

A high speed steer tire blowout will cure you of not using both hands on the wheel, for a few weeks anyways lol.
