Crust really only controls the “Bark” formation.
BBQ is a very complex process. Time, temperature, heat method. Then the whole dry or wet, fast or slow cook. To marinate or not.Last edited: Jan 1, 2026 at 11:29 PM

Something else about grocery stores you might absorb. Definition of "Contrast".
Go in a nice local grocery store in Greenville,MS. Looks neat, well arranged, clean and shined floors and all glass clear. Meat case crossways divides and set up the meat market on back. and the meat block is clean.
Then you wade in with an 80 pound fore or hind quarter to put in the cooler. Until you actually see, you cannot imagine what a typical lady customers shock would be at its inside, All sort/sizes/cuts of meats hanging here and there. some half used/cut off, bagged or not. Boxes of various items stacked around the walls, maybe 2 deep. How I Know.
Made 42 stops every Monday in Greenville in 1953/54. 6 or 8 were individual local stores on the main streets and outer edges., a couple of restaurant/BBQ places, Rest were Chinese storefronts on the corners.broke down plumber, Feedman, hope not dumb twucker and 8 others Thank this. -
That I have seen, our local still has swing rail because they still bring in halves or quarters and cut by request if a customer wants something not normally in the case.broke down plumber, Feedman, hope not dumb twucker and 7 others Thank this.

"BBQ is a very complex process."
Tried by many, mastered by few. I think there are 4 or 5 in Decatur/Athens, AL that all claim to like be world famous. Won a lot of cook offs.
I have eaten at 3 of them and a plate sent to the house and nothing else, I could not have noted a difference. I know, I have no taste...
EG: Here in Tupelo there are 4 known, and were owned and opd by man and wife.
They divorced. She got 2 and he kept 2. All are open, busy, have good food and service. Each claim to be like "original" something.
The best one closed up and left (Opus knows/ate there) due to labor cost and availability. He had one in Corinth where people would show up and actually work.
Was curious, so Googled "Chickem restuarants in Tupelo, MS now" and got this...
Tupelo, MS, has many operating chicken restaurants, from fast-food favorites like Chick-fil-A, Zaxby's, and Raising Cane's to local spots like King Chicken Fillin' Station, Connie's Chicken, and newer additions like Huey Magoo's (known for tenders). You'll also find regional chains such as Slim Chickens, Popeyes, and Wingstop, plus soul food options like ForkLift Restaurant and Aunt B's Soul Food for various chicken dishes.074344, broke down plumber, Feedman and 8 others Thank this. -
You are blessed to have it available. A lost art now, prepackaged. But this is ,you get the cut, size, and quality you pay for. Worth the difference.074344, broke down plumber, Feedman and 10 others Thank this.

We also have a guy that does mobile slaughter and of course has a butcher shop, a lot of his work he does on trade, that's where the really good meat comes from in this town, but you do pay for it.074344, JolliRoger, broke down plumber and 9 others Thank this.

I laid down for just a minute, and was immediately stampeded by a parliament of rhinoceroses.
