On the newer cats (6NZs, Acerts, etc.) fan turn on speed is 217F so the engine should run up to and a bit over that temp under normal conditions, On a long pull on a hot day the engine should get to 217F at which point the fan will come on, then the engine will climb to around 220-225F and then start to drop untill the temp is low enough for the fan to switch off (at around 200F I think), on a hot enough day the temp wont drop far enough to turn the fan off but if the cooling system is the right size the temp will settle at a temp below 217F untill the pull is over.
Lower temps are possible with some small mods to the cooling system.

the new detroits run ungodly hot from factory. 210-230 is the normal operating temp.

If your going to run this hot 220-230f waterless coolent is the way to go.
Water forms bubles/ hot spots on the water jaket even under pressure.
Heads crack from water bubles stopping heat transfer.
I put waterless coolent in my suv 8 yrs ago and picked up 1mpg do to timeing advance by the emc/knock sen. no hot spots, no knock, more advance.

Is there any other than Evans? It's quite expensive but I'd like to try it in the race truck, only problem is we have no dealer here. I have been using Redline Water Wetter with normal coolant, helps a little bit.
How is Evans working in winter? Is the heater less effective with it? -
I once read that you should only ever go as strong as 70:30 ratio with coolant, and above that will cause issues, but i don't remember what they are.

Yes, with water/glyco coolent as they need each other to work. water to thin the glyco, glyco to keep the water from frezzing.
