I used the Lunchbox cooker when I was driving OTR, and it worked great. It cooked rice well. When you start cooking your rice, add a skinless chicken breast, a pat of butter. You can substitute chicken stock or boullion for plain water. As everything starts to the stage of being cooked, add some cream of mushroom soup and some canned mushrooms. You can also add anything else like onions, bell pepper whatever your taste. Let cook a while longer and you're done. I would also use it to heat chili, or soup. Add some grated cheese to top it off and grab the crackers. A hot meal beats a truck stop hot dog and a Tornado any day. You can eat it right out of the foil pan, or have some paper plates and bowls. Nothing to wash, just throw it away.

I cook al the time in my truck i have a microwave,georgeforman grill,toaster oven,and a mini frig,so i come most anything i want the truck has a APU unit and i have a 3000 watt invertor,and i have a grill for the outside when i am sitting to restart...

I was out 2 weeks with my sweetie. My propane stove quit working. Fixed it when I got home. Been using the lunch box oven a lot. 3 boneless chicken breasts, a bottled water and some brown rice. Garlic powder. Cook for 45minutes, drop some fresh green beens on the top for an additional 30.
Not a bunch of water is needed as the chicken is full of it. I buy a chicken that comes 3 individual packages in a pack. Less mess in the truck. Walmart sells it. -

i may have missed it in the thread,but i have heard you can cook cornbred in a crockpot,could you also cook a meatloaf , if it was thin like an inch thick or so the same way -
There is a website called A Year of Slow cooking, this lady used her crockpot for an entire year. There is every recipe you would want on this site. I know for sure she has made meatloaf and pretty sure bread also.
