I understand about not wanting Spam due to all the things bad, to be honest I have cut way back on things like that since it does have the bad side.
I found out for myself at home frozen veggies are better than canned, but not very reasonable to take out on the road unless it was cooked then refrigerated in the truck.

I used to laugh at all the people writing about the things that were bad for you, too. Then I got sick as hell and went to three different doctors until I found out what was wrong. Turned out I had diabetes type 2. I went to self-management classes and got myself a self-management nurse and dietitian to teach me. I lost about 70 lbs., started to eat more fruits and veges, and now control it without the need for insulin. If you learn to read the nutritional labels on canned foods you'll learn canned foods contain enormous amounts of sodium. Tons of drivers are on blood pressure meds. Do you think there's any connection between the two? Noone can take control of their health but you. If you think it'll never affect you, you might have to learn the hard way as I did. Just a word to the wise.

Canned foods if eaten on a daily basis and as the bulk of your nutritional source is HORRIBLE.. JUST HORRIBLE for you. just think about that packaged hamburger, made months ago, tell your self that the meat which was proccessed to begin with and then cooked, applied chemicals to to keep it fresh for months on end, then six months later your heat it up and eat it. Im new to trucking but if your able to have a rice cooker in your cabin? i dont know, make brown rice everyday, add in some chicken, if you can cook your own chicken and eat that everyday along with some fruits and your set.

Canned foods and TV dinners have 1 ting in common... salt. they taste like crap , but have loads of salt.
Main question is for while you're on the roads, is there a way to get fresh foods [actual vegetables/fruits]? -

No, they are not good. Very little or no nutritional value and a lot of harmful chemicals. I am vegetarian and don't eat anything that has sugar (refined sugar). Unfortunately, I can't cook beans, soy beans, and some vegetables in the truck. So, I replace those with can food. I read all the ingredients, and pick the ones that have the least chemicals and no sugar. I also use Uncle Ben's pre cooked rice. Which is not good either... but it's either that or not eating... cause I gotta have rice with my meals. I cook brown rice once a week when I reset or whenever I can take more than 10 hrs break... The rest of the week I am soooo busy, not much time to spend cooking and my cooking does take some time, cutting vegetables, cooking in a pot on a stove, not a microwave...
