My DH drives a truck that he shares with others so he can't leave his things in the truck when he is home.
What are your tips for eating healthy on the road when you have this sort of arrangement? What types of foods are the easiest to bring with you/"prepare" on the road?

i don't like microwaves or coolers, so i would stock up on, dried fruit, nuts and granola or cereal

I just prepare my food at home for every single meal the right amount and nutrition, I put it into the fridge in the truck. I warm up wih the microwave what better that way. Just like home. I eat very healthy, I never buy any food in a truck stop. Althogh, I do only shorter trip, usualy a couple of days at a time. And when I got home I hit the gym. Before the trip weight lifting, after cardio. I consider this, part of my job. I did not do always like this, but I figured out, I am killing myself, so three years ago I changed for good. I lost a bunch of weight, I am healthy and fit now. I was 46 years old with high cholesterol, high blood preassure, high blood sugar, now I am healthy 49 years young.

Good ideas! Right now he is eating beans out of a can. Literally.
Would you recommend buying a fridge for a truck even if you share with someone? I would imagine that would be a PITA to move every week.
But I like the idea of preparing all the meals ahead of time! -
Well, it is depend on your situation. I own my truck, but I do not leave any food in it after my trip. In your shoe, at first, I would try to convince the owner, every quality company should have fridge in a long haul truck. My second idea to buy a fridge with the drivers who use the truck. Of course it works only if the same few use the truck. If I would work for a low quality employer always on different trucks, I would buy a battery powered cooler box. Still pain to move, but doable, and definitely better than to eat canned been constantly. I am sorry, but that is not healthy at all.

Keep your favorite snacks stocked in your cab like nuts, dried fruit. Instead of eating three massive meals every day. If you have a restaurant option choose the healthier menu items such as salads, baked potatoes, fruit cups, and more.
