Like the potato ideas.
My little oven has a hot spot but I rolled a piece of tin foli to create a small spacer
My favorite is bush beans with a good handfull of home smoked pulled pork. I freeze little zip lock bags full of pork so I can make the beans and pork or pick up some buns and have a sandwich. I really like coleslaw on my sandwich so I pick some up if I can.
I also like left over tritip shaveed thin and on crecontes. I make 1/2 a dozen before I head out.
Actually- I'm a left over junky. I do mashed potatoes and gravy, corn and beef in the small tin foil tray and freeze it so I can warm it up in my minny oven. I love ribs that way also.
I only go out 5 days at a time so I have the benefit of preparing a whole weeks food at home. If I take a bit of time I find I can get thru a whole week with only buying my breakfasts. A shower and a good breakfast always makes for a good day. -
I thought the 2nd one hubby had was the Coleman, but went out too. He came home and picked up the old one and it lasted for a little while, but went out too, this one we had already put a new bigger fan on and it cooled even better.
Cold potatoes are good too and easy to eat going down the road while driving if you have extra room in the cooker. Yukon gold are different too for a change. I bet it would be good for a sweet potato too. -
We cooked hot dogs and beans on the car manifold many years ago going through a driving zoo in the Springfield MO when son was little. Great way to save money and have a good meal.

I worked at a retirement home where our one chef had an Italian background. He always tweaked corporate recipes, but the main joke was where would we find the bay leaf. He loved using them and they seemed to escape to a residents plate somewhere along the line.
I bet it was a hoot with you 2 working together. The cooking at Holiday was more of a set menu and baked or steamed in large pans. It wasn't like a restaurant where you would be cooking a zillion different items.
My daughter likes to watch the program diners and dives, they have so many good looking meals going on. -
Works everytime, most drivers carry some sort of stove, I have one of those backpack stoves, heating soup and making tea. Called a mixed fuel , walmart sells the fuel.

I have "a bit" of camping gear here and was considering packing at least an Esbit stove in case other stuff died on me. I was also considering taking one of my propane stoves, but not sure about the rules and so forth regarding fuel in the cab, let alone how often I'll be somewhere that I can cook outside.
So far, I know I don't want to fry anything. That smell in that small of a space is a bit too cloying for me.
Really appreciating the potato idea. That sounds like a great meal. Some bacon, cheese, butter, and dehydrated chives that I was already going to pack sounds like I'll be in fat city. -
My dad has been working in the oil field for more than 30 years and he has a power inverter where he can hook up a regular microwave instead of 12v microwave. He also has a little thing( I don't know what you call it) that looks like an old time lunch box that he cooks steaks and things in; he says it takes about 3 hours to cook it and has to be turned every hour but once it is done is very tender and juicy. I will tell you also if you like pastas and can use a regular microwave, I have been known to cook spaghetti in the microwave when my stove went out, lol. You season your hamburger meat before you cook then cook in microwave about 40-50 minutes stirring occasionally then set aside and heat a big bowl of water for about 20 minutes for pasta. After the water is hot I always break my spaghetti noodles in half and stick them in the water with salt and a little oil so noodles don't stick and cook about another 30-40 minutes stirring occasionally and adding more water about half way through because the water will evaporate some. Then you can add your sauce and you have spaghetti. You can go to just about any bookstore and find recipes for cooking in the microwave also. I hope this helps someone get some better meals without breaking the bank.

And inverter should be at a minium of 2500 watts to run a micro wave, the smallest ones are about 900 watts. It takes about the same time to bake a potato on the exhaust as it does to bake one in the oven, about 1 .5 hours.
