I am guessing you are on the accelerator when you are letting out the clutch. That is causing the clutch to slip and there is the reason for you bucking. The grinding is because you are only partly in gear. If you are on the clutch your foot should be off the accelerator. Put pressure on the stick shift but it will fall into gear when the rpm's line up. The others have mentioned the rpms.
To remember which gear you should just remember the speeds. 5 mph 1 gear 10 2 gear. Every 5 miles per hour one more gear.
