Use my fitness pal app. You can lookup pretty much any food and scan bar codes. I use it and it works great.

Look up the primal blueprint online. I'm a really picky eater to, only liked cucumbers for vegetables back in the day. Try organic spinach. It does the job at keeping me full. Get yourself one of the roadpro lunch box ovens. Go to walmart and pick up the frozen tequila lime flavored buffallo wings, or seasoned chicken breast. Stay away from grains. Try to get all your carbs from fruit, and your chosen veggies. Lastly, water should be the only liquid you consume. Like carkool said, use myfitnesspal to track your food intake. Make sure your consuming no more than 100-150g of carbs to maintain your weight.

Next time you stock up on food, get canned vegetables like carrots and green beans and cook them in a lunchbox cooker (my favorite appliance on the road btw). Additionally, look on the back of the packages and avoid anything that contains processed sugars. The most common of these are anything labeled "high fructose corn syrup". Look for things sweetened with Splenda or something like it instead.

I've been OTR now for a little over three years now. I have some very specific dietary restrictions. I had a pancreatic tumor removed, and in order to accomplish that, I lost most of my stomach, some of the small intestine, the gall bladder, the duodenum, the bile ducts, and the head of the pancreas (called a "Whipple procedure"). As a result of all that, I can't eat anything fried, anything with processed sugars, dark green vegetables, any rice or noodles, and the big one, no beef. With that list in mind, what do you think the truckstops have for me with food selection in mind? LOL.

Point being, if you are intentional and creative, you can eat healthy out here.

Driver, in January I hit a wall and decided that 325 was way too heavy. I drove to the local Supercenter and bought the food I needed to eat while following a low carb diet. (I won't argue the merits of this way of eating here but I'll argue it on my thread in the subject).
My point is that in the last 12 weeks I've lost 45 pounds and have eaten 5 restaurant meals while on the road. Everything else has been fresh or cooked in a butane stove. No inverter, no fridge, just the 12volt cooler and the butane cooker. It can be done and the secret is to plan ahead. Hit up the Walmart, stock the truck and cruise. Good luck.

Read the labels; much of that microwave food is so high in cholesteral & salt it will plug your arteries and play havoc with the blood pressure.

    Jakaby Thanks this.

You're absolutely right about the salt. Check the back of the packages on all that microwaveable diet food, and you will see it is loaded with sodium
