I just started pulling a flatbed after a 12 year break from trucking, a lot of drinking water will be a good thing to have . I sweated 11 lbs off in 8 days.

That's good. There aren't too many truckers that watch their health. As flatbedders, a good 70% of what we do is in the sun, and its flippin hot. Drink plenty of water and watch for the signs of heat stroke.

No carbs is not the best idea either, carbs are what gives you energy.
