cooking in the truck

    Sounds tasty do what about mixing up some lean ground beef rice possibly tinned veggies maybe some jalapeños .

    Chef Brian sounds good , I've never actually sampled meat loaf I've seen it on menus while I've been on vacation in the us .I mostly go for ribs or a decent burger with fries or another meat dish when I was driving international between Ireland and continental Europe I used to cook all
    my meals in the truck .

    I watched a video a couple of years ago from a lady trucker in the USA out of basic ingridients some ground beef some beans some dry rice looked very tasty . The burton stoves really have taken off

    I didn't notice that you were from over the pond until after I posted that recipe for meatloaf (a popular comfort food here) and I thought, "Heck...he might not even know what meatloaf is." You should give it a try though...it's tasty and you can use whats left over to slice and put in a sandwich the next day.

    I've been trying to figure out a way to make Shepherds Pie or a simple pot pie with that cooker but I haven't worked out some of the ingredients and cook times yet. I'm trying to gear these recipes to maker them trucker friendly because as a driver I know the time constraints and whacky schedules we all have. But for me, I put stuff in a slow cooker when I start driving (sometimes I'll prep the ingredients the night before which only takes a few minutes). I like to eat a little bit more healthy than some so I buy a lot of fresh produce and such. I can buy $50 worth of food and cook it myself and that usually lasts me a week. If I eat two meals a day at some fast food joint or truck stop I'd be spending $20-25 daily and I don't get anything out of it.

    I just bought a nice little log home in northern Michigan. It needs some repairs and maintenance so I'd much rather eat in my truck, pocket the savings and put that toward my home so that when I retire I've got a nice place to live and be proud of rather than pissing away thousands of dollars on fast food that's unhealthy and that I have nothing to show for after my money is gone.

    I agree with you about the proper cooking appliances. One good option is a single pot butane burner. As long as your not using it for long periods of time in an enclosed area they are good for frying a burger, steak, eggs or sauteing some veggies in butter or olive oil. I've even used one to make fried chicken a time or two.

    As for seasoning, whenever I come up with a recipe, I try to keep the seasonings listed to a minimum. Different people have different tastes so I like to leave some of that up to the individual. You're right, a good cook tastes the food as he goes along and I often add other spices and herbs to my food to suit my taste, but for the sake of sharing a basic recipe I leave out some of those added ingredients in case people are sensitive to them or don't like the flavor of what I use.

    I think I will end up doing some videos with a friend of mine who studied and now teaches film production at Penn State. I don't as yet have the cameras (or time) that I need to do it right and he has offered to film and edit a couple of them to start off. He has a YouTube account and he does these political commentary videos and has a few thousand subscribers. A few months ago he got a check for $3,000 from YouTube!

    He seems to think that if we do it right, I could get a gig with Travel TV or something like that. We're working out the details, but I think it would be cool to focus on the life of trucking and incorporate a cooking aspect into the show as well. My hope is to bring cooking into a show about trucking, so that while I focus mainly on the cooking and living on the road aspect of trucking, I can still make people aware of the politics and regulations that everyday truckers face while trying to get food and everything people need to live on into their homes.

    I've always loved being out on the road, and frankly I left a profession that paid me a lot more money than driving a truck. But the fact is...I love driving a truck and I love food...so I'd like to share that with others.

    Anytime, You can't beat a good chef! I'm more of a baker myself.....I can cook pretty well but I absolutely LOVE baking...since It's more of a science (at least to us Europeans) We measure everything in grams rather than do things in cups....I've got used to cup measuring since I've moved to North America though!!

    I'm looking forward to actually getting out on the road one of these days, once I get around to going to CDL school. As for the few hundred dollars....It doesn't have to be much, every little helps....especially for your cabin. As for eating in cheap places mate....You don't need to worry about having nothing to show for it since you won't live that long to worry about it anyway!!! hahaha :D It's nice to see that some truckers DO look after themselves.

    I really CAN understand how easy it is to neglect yourself, but all it takes is some will power and getting into a routine, something you've obviously done very well. What is sad to me is seeing companies making people take sleep apnea tests because many drivers have got so big. It's a sad state of affairs. I don't think any one factor is to blame and I don't blame the drivers...how can I when your own congress labels Pizza as a VEGETABLE for school children! The massive food companies that produce all the mass crap that everyone eats (including on our side of the atlantic in the UK) have all the politicians in their pockets....so it starts young.....I'm completely off topic now though so I'll shut up! haha

    I'm going to try your recipe for meatloaf here at the house and see how it goes. If you do need anything for quick water boiling at any point, I really DO recommend a jetfoil. It's an upfront hundred bucks, but I bought mine in 2006 and It's still going strong.....and since then has been to Afghanistan three times and Iraq twice. :D

    My wife has a ton of recipes you can use for lunch box oven tell me what you like or want and she'll give you recipes and instructions if you need them

    Sausage,egg, cheese and avocado breakfast burrito wrapped in a Lo carb tortilla.

    Breakfast in minutes for less than 2 bucks. Avocado being the most expensive item. [​IMG]

    That looks really tasty.....I'd probably need 6 of them though.....I always find that wraps never fill me up :/
