Don't bring perishable food while on trainer's truck. That solves the problem. The guy needs miles and if you eat something that you did not know had spoiled he is not going to be happy to stop every two hours for you to spend 30 minutes in a bathroom!
When I was with a trainer I found these (actually a brand name version) at this store.

Also there is single serving tuna, plain or salad at most stores.

No cooler needed. Apples, bananas, oranges, pears, radishes, celery, carrots, bell peppers plenty of food that you can take without needing a cooler.
I usually take some berries to eat in the first couple days out and also a Pineapple or melon to cut when ready to eat. Packaged sausage. Cans of veggies, corn, carrots beets. Beans not so much. Tuna, sardines, kippered snacks. As others have said. PBJ. Peanuts and celery are pretty tasty also.
For a cheap cooler the idea of an insulated cooler and add ice or freeze water in bottles at home then you can drink when melts, or frozen tea, juice.

I'm surprised your company doesn't give your trainer allowance to pay for your food.
When I was a student driver, my trainer sponsored my all my meals for the whole phase. Thankslovesthedrive Thanks this. -
If your trainer has an extremely stripped down truck, what's YOUR truck going to be like? I worry when I read 'no inverter, no cooler, no fridge, etc.' You can't save any of the little money that carrier is paying if you have to spend it all on truck stop food.

Where is it written you cant strap a cooler or anything to the cat walk? How bout 2 wheel chocks with bungies?
I am lucky I am local and home every night so I can pack drink & lunch in a 6pak cooler. When with trainers I did keep it between my legs on the floor when in a day cab but with other safety items it gets tight so on the cat walk it goes and no one said it was a no no. When I have had my own trucks it was put between the seats so I could reach it. Safety items went on the passenger floor. Trainer with sleeper was easy everything went in the bunk area.
And yes I do ask what safety gear is needed for the training I am doing and if I can bring the cooler. So far all have said yes to the 6pak cooler. I use 2 of the 6 bottles of water frozen to keep it cool.

When I was learning with CR England, before I left home I was told to bring $400 for food and possibly a ticket to get home when the trainer threw you off the truck for what ever reason. Apparently companies are no longer as considerate for the new driver.
