12V cooler, water kettle if you have a big enough inverter. I may get a hot plate, and small microwave. For cold meals, buy tuna in pouches. Get a Miracle Whip packet from in the truck stop, makes a couple thick sammiches. Lunchmeat and cheese, I love string cheese and yogurt, too. But, some days, I can't quite resist the call of the buffet.

If I had known about Cracker Barrel, I never would have dined at Denny's. It can be hard to avoid truck stop food when you are parked at a truck stop that (like the proverbial cheese) stands alone. I have had some good meals at Southfork and JJ's in Arkansas.

Rs place isn't bad, but no where near as good as they used to be.
Hoods on 44 in Missouri is probably the best truck stop restaurant I've had.
Your best bet for good food is get an electric skillet and a small crock pot, then hit a grocery store once a week.
Today's menu was scrambled eggs with cheddar cheese and salsa on top four breakfast. Dinner was cabbage and kielbasa sausage that simmered in the crock pot for six hours. -
Every time I go through beaumont I park at the Petro and walk across the street to cracker barrel for chicken and dumplings.
