Eating on the road

  1. Well, I've been looking for recipes on here and found a few promising threads that seem to get sidetracked really quickly. So for now, if everyone will, lets keep this one on the topic by only posting recipes or replies to the recipe. We can have our own Cookbook.

  3. I like to put everything together in a freezer bag on days off. It stays in the fridge for a week + and cook when you feel like it. Very healthy recipe too.

    Marinade:
    1/2 cup olive oil
    2 tablespoons apple cider vinegar
    1 teaspoon oregano
    1/2 teaspoon worcestire sauce
    1 tablespoon lemon or lime juice
    1/4 cup water
    2 cloves of garlic

    Mix the marinade and set aside.

    Cut up one bell pepper (I like yellow but any color works), 1/2 onion, 1-2 pounds chicken breast (you can use any cut of meat but chicken breast or turkey breast is the healthiest, I suppose) into small strips.

    put the peppers, onions and chicken into a freezer bag and pour the marinade over. zip it up and put it in the mini-fridge.

    When ready to cook, heat up your propane stove and cook it on high. Just take a little out of the package at a time though to avoid getting to much oil/water in the pan (it will boil instead of frying).

    I carry some small tortillas. Use them to make burritos, fajitas and wraps.

  4. This one will last in the fridge/cooler for a little over a week. You can make it on the road too, but it will be chunkier.

    Very simple,

    Combine:

    2 medium-large avocados
    1 medium size white onion
    1 medium or 2 roma tomatoes
    1teaspoon apple cider vinegar
    1tablespoon salt
    1 teaspoon black pepper
    1 tablespoon lime juice (or lemon)

    I put them all in a food processor and puree.... you could always cut the tomatoes and onion small and mash the avocado with a fork if you like

    At home, we like homemade vegetable soup with corn bread. Make your favorite vegetable soup remembering that some ingredients break down when frozen. It will still be nutritious, just not as 'pretty'. If that bothers you, stick to carrots, green beans, corn, etc. that freeze well. We also use zesty v-8 juice for the soup base for additional nutrients. For otr, freeze it in quart bags. When lunch or supper time arrives, heat a bag of the soup and enjoy with corn bread. We make our corn bread in the waffle iron. No fighting over the corners that way and avoids the crumbling of 'normal' corn bread. Travels much better, too.

    Well I like this its real easy :) and tasty in my opinion and somewhat healthy, not really a meal I guess it could be considered as such.

    1 cup of rice cook this first
    1 small can of corn(or whatever veggy you like)

    Combine the corn and rice, the rice will heat the corn up. Then add 1 can of drained tuna. top with some soy sauce. Add pepper and salt to taste. Yum yum :) Very simple

    With cooler weather coming here's one:

    Chili

    1 lb ground beef
    2 large cans of tomato sauce (can swap out one with diced toms)
    1 0r 2 small cans chili beans
    Pepper - chopped (green, red, yellow 0 whatever)
    Onion - chopped (your choice - yellow, red, white)
    Salt
    Pepper
    Chili powder
    Tobasco

    Brown ground beef, drain grease, add remaining ingredients, and simmer. Freeze in freezer bags or storage containers. It's great as left overs.

    Is it possible to use a slow cooker while driving? Not so much in town, but out on the road.
