I-5 is a lumpy road for sure, but parts of it are being repaved. Just watch the dips/mismatched levels on and off the short bridges. Harris Ranch restaurant (not Harrisons) does have good food, and it's own airstrip right out front. If you really want to impress your lady friend, fly her there for dinner. But watch for stout crosswinds on landing.

Zero traffic on the 5?? Man it's congested the whole way these days
-
Congested where? Maybe going north? I'd run to stockton or south to 198 visalia, kettlemen, or Bakersfield-not much going on in that stretch besides the one lane northbound for construction last year.

Redding to Corning isn't bad but after that u have 4 wheelers driving back to back all the way to LA. Doesn't help with the 55 mph speed limit for trucks- with governed trucks pissing off the 4 wheelers by trying to pass when they can barely go 61.
RustyChops41 Thanks this. -
you'll get used to it .. no biggie
