There are better options than a propane stove.
A 12V lunchbox oven for one.
If you have a decent inverter you can use an electric grill. My new truck has a 1800W inverter so I got an electric grill and a toaster oven. Things cook more quickly and taste better if you have that option.
With the 12V lunchbox oven you can bake potatoes, cook rice and veggies, hamburgers and sloppy joe's. Salmon or chicken, whatever.
I've used them for many years, and can cook just about anything I want.
But propane is neither convenient or safe.
You can not use it inside the truck, and cooking outside requires certain weather conditions.
And the propane could explode under certain conditions.
It is also costly.
Think 'inside the box' on this one.
As in, what is the best way to cook inside the truck.
Electric is the only way. It is clean, safe and cheap.

walmart sells propane pretty cheap,

I use a crockpot. I have an inverter but they also make 12v models. Throw my meal in the the morning and by the time I call it a day it's good to go. I can usually eat 2 nights on one crock pot meal.

My understanding is that you need to store the propane in a outside box or behind the cab as your not allowed to have hazardous materials inside the cab

I carry a alcohol burner about half the size of a pop can that can be used to cook but its main function is to keep cab warm if need be. I always carry plenty of company supplied brake line antifreeze to burn in it in the event the POS freight liner dies in the middle of nowhere. Last time it died I sat 10 1/2 hours before help arrived. I don't mind as I get paid to wait,,,in fact 20% of my income on the job is waiting time.
